Ingredients

  • 1 can chickpeas (14.5 oz), drained and rinsed
  • 1 medium onion, diced
  • 2 medium bell peppers, diced
  • 1 can diced tomatoes (14.5 oz)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 8 ounces chorizo, sliced
  • 4 cups vegetable broth

Instructions

Heat the olive oil in a large pot over medium-high heat.

Add the diced onion and cook until softened, about 5 minutes.

Add the diced bell peppers and cook for an additional 2-3 minutes, until tender.

Add the smoked paprika, cumin, and cayenne pepper to the pot, stirring to combine.

Cook for 1 minute.

Add the sliced chorizo to the pot, cooking for 2-3 minutes, until browned.

Add the diced tomatoes, vegetable broth, chickpeas, salt, and pepper to the pot.

Stir to combine, then bring the mixture to a boil.

Reduce the heat to medium-low and simmer the stew for 15-20 minutes, or until the flavors have melded together and the stew has thickened slightly.

Season with additional salt and pepper to taste.

Serve hot, garnished with fresh herbs if desired.

Notes

You can customize this recipe based on your personal spice level by adjusting the amount of cayenne pepper used. If you prefer a milder flavor, start with a smaller amount and add more to taste.

Chorizo can be replaced with other spicy sausages, such as pepperoni or Andouille, if you can’t find chorizo or prefer a different flavor.

To make this recipe more substantial, serve with crusty bread or over rice or quinoa. Feel free to add other vegetables, such as diced zucchini or sliced mushrooms, to make the stew more hearty.

If you want a thicker stew, mash some of the chickpeas or add a little cornstarch to the pot before simmering.
