Refreshing Honeydew Melon And Blackberry Salad Recipe Summer Delight
Sweet and refreshing, this honeydew melon and blackberry salad is the perfect way to beat the summer heat! The combination of juicy melon, tart blackberries, and a hint of lime will transport you to a sunny day, minus the heat stroke.
Ready Time
20 mins
Yields
10 servings
Ingredients
- 2 ripe honeydew melons, peeled, seeded, and cubed
- 1 pint fresh blackberries
- 1/2 cup granulated sugar
- 2 tablespoons fresh lime juice
- 1/4 teaspoon salt
- 1/4 cup chopped fresh mint leaves
- 1/2 cup crumbled feta cheese (optional)
Instructions
In a large bowl, combine the cubed honeydew melon and fresh blackberries. In a small bowl, whisk together the granulated sugar, fresh lime juice, and salt until the sugar is dissolved.
Pour the sugar mixture over the honeydew melon and blackberry mixture, and toss to combine.
Stir in the chopped fresh mint leaves. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Just before serving, sprinkle the crumbled feta cheese over the top of the salad, if using.
Serve chilled and refreshing!
Notes
For perfect honeydew melon cubes, cut them just before assembling the salad to prevent browning. You can also use a melon baller to get uniform balls instead of cubes.
Fresh blackberries are a must for the best flavor and texture, so try to avoid frozen or thawed ones.
Don’t over-whisk the sugar mixture, as it can become too frothy. Just whisk until the sugar dissolves.
If using feta cheese, sprinkle it just before serving to preserve its texture.
To make this salad ahead of time, prepare everything except the feta cheese and refrigerate for up to 2 hours. Add the feta cheese just before serving.
You can easily double or triple the recipe for a larger crowd, just keep the refrigeration time the same.
Experiment with different types of melons, like cantaloupe or watermelon, for a varied flavor profile.
