Ready Time
30 mins
Yields
9 servings
Ingredients
- 1 pound of fresh, raw shrimp, peeled and deveined
- 1/2 cup of freshly squeezed lime juice
- 1/4 cup of chopped red onion
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of chopped fresh cucumber
- 1 jalapeño pepper, seeded and chopped
- 1 avocado, peeled, pitted, and sliced
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
Rinse the shrimp under cold water, then pat them dry with paper towels to remove excess moisture.
In a large bowl, combine the shrimp, lime juice, red onion, cilantro, cucumber, and jalapeño pepper.
Make sure the shrimp are completely covered with the marinade.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the shrimp to “cook” in the lime juice.
Just before serving, stir in the salt and black pepper.
To assemble the dish, place a portion of the shrimp mixture onto a plate or into a glass, then top with sliced avocado.
Serve immediately, garnished with additional cilantro if desired.
Repeat the assembly process for the remaining eight servings.
Notes
For the freshest flavor, use freshly squeezed lime juice and chop the cilantro, onion, and cucumber just before assembling the dish. Make sure to pat the shrimp dry thoroughly to remove excess moisture, as this will help them “cook” evenly in the lime juice.
If you prefer a milder flavor, use only half of the jalapeño pepper or omit the seeds, which contain most of the heat.
To prevent the avocado from browning, slice it just before serving. You can also prepare the shrimp mixture up to a day in advance, but be sure to refrigerate it at 40°F or below to maintain food safety.
