Zucchini Fritters

Ingredients

  • 1 cup grated zucchini
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup milk
  • 2 tablespoons olive oil

Instructions

Start by grating the zucchini and setting it aside to drain off excess moisture for about 10 minutes.

Wrap it in a paper towel and squeeze as much liquid out as you can.

In a large bowl, whisk together the flour, cornstarch, Parmesan cheese, parsley, salt, baking powder, and pepper.

In a separate bowl, whisk the eggs and milk together.

Add the olive oil and whisk until smooth.

Add the egg mixture to the flour mixture and stir until just combined.

Do not overmix.

Add the drained zucchini to the bowl and fold it into the mixture until it’s evenly distributed.

Using your hands, shape the mixture into 8 small patties, about 1 1/2 inches in diameter and 1/2 inch thick.

Heat a large non-stick skillet or griddle over medium-high heat.

Add a small amount of oil to the pan.

Once the oil is hot, add the patties to the pan and cook for 3-4 minutes on each side, until they’re golden brown and crispy.

Serve the fritters hot and enjoy!

Notes

Make sure to really squeeze out as much liquid from the zucchini as possible – it’ll help the fritters hold together better. Don’t overmix the batter, or your fritters might end up dense and tough.

If you find the mixture too wet, add a little more flour.

If it’s too dry, add a bit more milk. For an extra crispy exterior, make sure the pan is hot before adding the patties.

You can also sprinkle some extra Parmesan cheese on top of the fritters before serving for extra flavor.

These fritters are perfect as a side dish or even as a snack on their own – just serve with your favorite dipping sauce!
