Venetians

Who doesn’t love a good Venetian? These delicious little bites are perfect for any occasion! Made with just a few simple ingredients, they’re sure to please everyone at your next gathering!

Ingredients

• -1 pound almond paste
• -1 1/2 cups softened butter
• -1 cup white sugar
• -4 eggs, separated
• -2 cups all purpose flour, sifted
• -1 teaspoon almond extract
• -1/4 teaspoon salt
• -4 drops red food coloring
• -4 drops green food coloring
• For the Filling:
• -1 and 1/2 cups apricot jam
• -Semisweet chocolate, chopped (about 1 pound)

Instructions

1. Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius) and grease three 13 x 9 inch pans with butter or cooking spray. Line the bottom of each pan with a sheet of wax paper cut to size.

2. In a large bowl, combine 1 pound almond paste, 1 1/2 cups softened butter, 1 cup white sugar, 4 eggs (yolks only), and 2 teaspoons almond extract. Beat the mixture for five minutes until it is light and fluffy in texture. Add 2 cups sifted all-purpose flour and 1/4 teaspoon salt to the bowl and mix everything together until well combined.

3a. If you are using apricot jam for your filling, measure out 1 and 1/2 cups now and set it aside. Otherwise, if you are using chocolate for your filling, chop up one pound of semisweet chocolate into small pieces now and set it aside.

3b. In a separate bowl, beat four egg whites until stiff peaks form. Using a wooden spoon or rubber spatula, fold the beaten egg whites into the batter from step 2 until they are fully incorporated – be careful not to overmix or deflate the egg whites too much in the process!

There is no one answer to this question as there is no definitive definition of what a “real Venetian” is. However, we can narrow down the possible answers by looking at the various types of settlements in and around Venice.

The city has been a UNESCO World Heritage Site since 1987 and was voted one of the New7Wonders Cities in 2009. Around 60,000 people live within the city limits, although this number swells to over 200,000 when including the surrounding metropolitan area. So, it’s safe to say that some real Venetians do live within the city proper.

Frazioni are administrative divisions of Italy that are similar to municipalities but are subordinate to a municipality or Metropolitan city. There are over 700 frazioni in Italy, with 21 located within the Metropolitan City of Venice. These Frazioni have populations ranging from just over 100 residents up to over 10,000. So while not technically part of Venice proper, these frazioni could also be home to some real Venetians.

Venice also contains several large island resort towns such as Lido di Venezia, Pellestrina and Murano which are popular tourist destinations but have relatively small year-round populations (usually less than 5,000 residents). It’s possible that some real Venetians call these places home, but it’s more likely that they would reside in one of the other settlements mentioned above.
