Ingredients
- 1 pound sweet potatoes, peeled and cubed
- 2 medium butternut squash, peeled, seeded, and cubed
- 1 large red onion, sliced
- 4 shallots, sliced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 pound sweet Italian sausage, casings removed
- 4 cloves garlic, minced
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss together the sweet potatoes, butternut squash, red onion, and shallots.
Drizzle with olive oil, sprinkle with thyme, paprika, salt, and pepper, and toss to coat.
Spread the vegetable mixture out in a single layer on a large baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and lightly caramelized.
While the vegetables are roasting, cook the Italian sausage in a large skillet over medium-high heat, breaking it up with a spoon as it cooks, until no longer pink, about 5-7 minutes.
Drain excess fat.
Add the minced garlic to the skillet and cook for 1 minute, until fragrant.
After the vegetables have roasted for 25-30 minutes, remove the baking sheet from the oven and stir in the cooked sausage mixture.
Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the flavors are melded together and the sausage is heated through.

Be prepared for a flavorful and filling meal, as this recipe makes a generous 8 servings! Use high-quality sweet Italian sausage for the best flavor.
Make sure to not overcrowd the baking sheet, as this can prevent even roasting.
