Ingredients
- 1 pound ripe melon (such as cantaloupe or honeydew), cut into 1-inch cubes
- 4 ounces prosciutto, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons honey
- 1 tablespoon lemon juice
- Salt, to taste
Instructions
Cut the melon cubes into bite-sized pieces and place them in a large bowl.
Arrange the prosciutto slices on a plate or tray, making sure they don’t overlap.
In a small bowl, whisk together the honey and lemon juice until well combined.
Sprinkle the chopped mint leaves over the melon cubes, then drizzle the honey-lemon mixture over the top.
Season with salt to taste.
To assemble, place a few melon cubes onto a serving plate or platter, then top with a few slices of prosciutto.
Repeat this process until all the ingredients are used up, finishing with a sprinkle of mint leaves on top.
