Ingredients

  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 3-4 cloves garlic, minced
  • 2 cups diced potatoes (about 2-3 medium-sized potatoes)
  • 1 cup chicken or vegetable broth
  • 1/2 cup milk or cream
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Optional: grated cheddar cheese, sour cream, bacon bits, or chopped chives for toppings

Instructions

Melt the butter in a large pot over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute, until fragrant.

Add the diced potatoes, chicken or vegetable broth, and dried thyme to the pot. Season with salt and pepper to taste.

Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are tender.

Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a blender and blend in batches, then return it to the pot.

Stir in the milk or cream and continue to simmer the soup for an additional 5-10 minutes, or until heated through.

Taste and adjust the seasoning as needed. Serve hot, topped with your choice of grated cheddar cheese, sour cream, bacon bits, or chopped chives, if desired.

Notes

You can use leftover cooked potatoes to save time on prep work.

Just be sure to adjust the cooking time accordingly.

If using an immersion blender, be careful not to splash the hot soup.

It’s also a good idea to blend in small circles to avoid creating a vortex.

If you prefer a chunky soup, simply omit the blending step or blend only partially.

For an extra rich and creamy soup, use cream instead of milk.

You can also add a little more butter for an extra boost of flavor.

Keep in mind that the soup will thicken as it cools, so you may want to adjust the consistency with a bit more broth or cream before serving.

Feel free to customize with your favorite toppings – the grated cheddar cheese adds a nice salty kick, while the sour cream adds a tangy touch.
