Ingredients

  • 2 cups fresh corn kernels

Instructions

Start by rinsing the fresh corn kernels and pat them dry with a paper towel to remove excess moisture. In a large bowl, combine the corn kernels, cherry tomatoes, red bell pepper, and red onion.

In a small bowl, whisk together the olive oil, lime juice, salt, and pepper to make the dressing.

Pour the dressing over the corn mixture and toss to coat. Stir in the chopped cilantro and let the salad sit at room temperature for at least 30 minutes to allow the flavors to meld together.

Notes
