3. Add in the vanilla extract, vanilla bean seeds, and salt, mixing until well combined.

4. Gradually add the all-purpose flour, mixing until the dough comes together.

5. Roll the dough into a log about 2 inches in diameter and wrap it in plastic wrap. Refrigerate for at least 30 minutes.

6. Once chilled, slice the log into 1/4-inch thick rounds and place them on the prepared baking sheet.

7. Bake for 15-20 minutes or until the edges are lightly golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

  • For an extra touch, sprinkle the shortbread with a little granulated sugar before baking.
