Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 1/3 cups rolled oats
  • 1 cup butter, softened
  • 1 1/2 cups packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups shredded coconut
  • 1 cup semisweet chocolate chips
  • 3/4 cup chopped walnuts
  • 1 cup candy-coated chocolate pieces (optional)

Instructions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Grease two 10 inch pizza pans or baking sheets.

3. In a large bowl, combine flour, baking soda, salt and oats. Stir well to blend.

4. In another bowl, cream butter, brown sugar, eggs and vanilla together thoroughly.

5. Add the flour mixture to the creamed mixture and mix well until combined.”

6. Stir in 1/2 cup coconut and chopped nuts.”

7″ Spread dough evenly in 2 greased 10 inch pizza pans or press into 10 inch circles on greased baking sheets.”

8″ Bake at 350 degrees F (175 degrees C) for 10 minutes.”

9″ Remove from oven and sprinkle with chocolate chips, remaining 1 cup coconut, candies and peanuts.” “Bake for 5-10 minutes longer or until golden brown.”” Cool in pans on wire racks.”” Cut cooled cookie pizza into wedges.””
