- 3 ripe avocados, 2 cups chicken or vegetable broth, 1/2 cup heavy cream or half-and-half, 1 tablespoon freshly squeezed lime juice, 1 teaspoon Dijon mustard, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 2 tablespoons chopped fresh cilantro or chives for garnish, 1/4 cup diced red bell pepper for garnish (optional)
Instructions
Peel and pit the avocados and place them in a blender or food processor. Add the chicken or vegetable broth, heavy cream or half-and-half, lime juice, Dijon mustard, salt, and black pepper to the blender.
Blend the mixture until smooth and creamy.
