Ingredients

  • 1 package flat rice noodles
  • 6-8 tablespoons fish sauce
  • 3/4 cup rice vinegar
  • 1-2 teaspoons tamarind paste/concentrate
  • 1 cup sugar
  • Pinch paprika or cayenne powder
  • 10-12 tablespoons oil, divided
  • 4 eggs
  • 1 pound chicken tenders, cut into bite-sized pieces
  • 1/3 cup roasted peanuts, chopped roughly
  • 1 cup bean sprouts
  • 1 lime, cut into quarters

Instructions

1. In a large container, soak the noodles in cold water for at least 2 hours or up to 12 hours.

2. In a shallow bowl, whisk together the fish sauce, rice vinegar, tamarind concentrate, and sugar until smooth. Add a pinch of paprika or cayenne powder for color.

3. Working one batch at a time: heat a wok or other large pan with high sides over high heat and add 2 to 3 tablespoons of oil. When the oil starts to shimmer a bit, crack the eggs into the pan and gently loosen the yolk with the tip of a wooden spoon. You want enough oil in the pan so it looks as though the egg is floating in it – this gives you more surface area to cook without burning it. Gently shake and flip around for about 1 minute then push off to side of pan make room for chicken. If pan seems too dry because eggs have absorbed all oil (not likely but possible), add 1-2 more tablespoons of oil before adding chicken. Cook chicken 4-5 minutes turning to make sure cooked most way through then set aside on plate with juices
