Bunuelos

A staple of Mexican cuisine, Bunuelos are a type of fried dough that is often served as a dessert. They can be made from a variety of different flours, but all Bunuelos share one common trait: they’re incredibly delicious! Whether you like them plain or topped with fruit, honey, or cinnamon sugar, Bunuelos are sure to satisfy your sweet tooth.

Ingredients

  • 1. 4 eggs
  • 2. ¼ cup white sugar
  • 3. 1 teaspoon vegetable oil
  • 4. 2 cups all-purpose flour
  • 5. 1 teaspoon baking powder
  • 6. 1 teaspoon salt
  • 7. 1 cup white sugar, for coating
  • 8. 1 teaspoon ground cinnamon, for coating
  • 9. Vegetable oil, for frying

Instructions

1. In a large bowl, whisk together the eggs and sugar until thick and lemon-colored. Add the oil and mix well.

2. In a separate bowl, combine 1-1/2 cups of flour, baking powder, and salt. Gradually add this to the egg mixture, mixing well until combined.

3. Turn dough out onto a floured surface and knead for several minutes until smooth. Divide into 16 balls.

4. Roll each ball into a 5-inch circle on wax paper. Let stand for 10 minutes uncovered before frying in hot oil (350 degrees F). Fry circles until golden brown on both sides then drain on paper towels or wire racks over absorbent paper towels or newspapers to cool slightly before serving warm sprinkled with sugar/cinnamon mixture
