Bacon And Blue Cheese Guacamole

Ingredients
- 3 ripe avocados, halved and pitted
- 1/2 cup crumbled blue cheese
- 1/2 cup crispy cooked bacon, crumbled
- 1/4 cup red onion, finely chopped
- 1 jalapeño pepper, seeded and finely chopped
- 1/2 teaspoon lime zest
- 2 tablespoons freshly squeezed lime juice
- Salt and pepper to taste
- 2 cloves garlic, minced
- Fresh cilantro leaves for garnish
Instructions
Mash the avocados in a large bowl with a fork until they’re mostly smooth.
Add the crumbled blue cheese, crispy bacon, chopped red onion, chopped jalapeño, lime zest, and minced garlic to the bowl.
Stir until everything is well combined.
Squeeze the lime juice over the top of the mixture and stir until the guacamole is creamy and smooth.
Season with salt and pepper to taste – you may want to add more lime juice or salt depending on your personal preference.
Cover the bowl with plastic wrap, pressing the wrap directly onto the surface of the guacamole to prevent browning.
Refrigerate for at least 30 minutes to allow the flavors to meld together.
Just before serving, garnish with a sprinkle of fresh cilantro leaves and serve with tortilla chips or veggies of your choice.

Notes
Use ripe avocados for the best flavor and creamy texture. Don’t over-mix the guacamole or it’ll become too smooth and lose its chunky vibe.
If you’re not a jalapeño fan, feel free to substitute with a milder pepper or omit altogether.
Blue cheese can be polarizing, so adjust the amount to your taste – if you’re not a fan, you can substitute with feta or goat cheese. If making ahead, prepare everything except the lime juice, then stir it in just before serving to prevent browning.
For a lighter flavor, use only 1 tablespoon of lime juice and adjust to taste.
