Avocado, Tomato, And Mozzarella Salad

Ingredients
- 4 ripe avocados, diced
- 2 large tomatoes, diced
- 8 ounces fresh mozzarella cheese, sliced
- 1/4 cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon chopped fresh basil
- Salt and pepper to taste
- Optional: 1/4 teaspoon red pepper flakes for some heat
Instructions
Start by halting the diced avocado with a squeeze of lemon juice to prevent browning.
In a large bowl, combine the diced avocado, tomatoes, and sliced mozzarella cheese.
In a small bowl, whisk together the olive oil, balsamic vinegar, and chopped fresh basil.
Season the dressing with salt, pepper, and red pepper flakes if using.
Pour the dressing over the avocado mixture and toss gently to combine.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Just before serving, give the salad a good stir and adjust the seasoning if needed.
Divide the salad among 8 plates and serve chilled.
Notes
This salad is best made just before serving, but you can prep the avocado and store it in the fridge for up to 2 hours if you need to get a head start. Don’t overdress the salad, you want the flavors to meld together but still maintain their freshness.
Use the ripest avocados you can find, it’ll make all the difference in the creaminess of the salad.
If you’re not a fan of balsamic vinegar, you can substitute it with a good quality apple cider vinegar for a slightly sweeter flavor. Don’t skip the refrigeration time, it’s essential for the flavors to meld together and the textures to combine beautifully.
