- 6 slices whole grain bread
- 3 ripe avocados, mashed
- 1 pint cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
- 1/2 cup crumbled feta cheese (optional)
Instructions
Start by toasting the six slices of whole grain bread until they’re lightly browned and crispy. Spread a generous amount of mashed avocado onto each slice of toasted bread – you should end up using about half of the mashed avocado.
Drizzle one tablespoon of olive oil over the avocado, then sprinkle a pinch of salt and a few grinds of black pepper on top.
Add a few halved cherry tomatoes on top of the avocado, leaving a small border around the edges of the bread. Sprinkle a pinch of minced garlic over the cherry tomatoes, making sure not to overpower the dish.
Garnish each slice with a sprinkle of chopped fresh basil leaves and a sprinkle of crumbled feta cheese, if using.
Repeat the process with the remaining ingredients to make six servings in total.
Notes
For the best results, use ripe avocados that are slightly soft to the touch – they’ll mash up creamily and give you a better texture.
If you’re not a fan of strong garlic flavor, start with one clove and add more to taste.
Don’t overdo it on the garlic, as it can quickly overpower the other flavors.
Fresh basil is a must – the dried stuff won’t give you the same bright, herby flavor.
