Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded pepper jack cheese
- 1/4 cup chopped pepperoni
- 1/4 cup sliced black olives
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
Preheat the air fryer to 375°F (190°C). In a small bowl, mix together the olive oil, dried oregano, garlic powder, salt, and pepper.
Brush the mixture evenly onto both sides of the chicken breasts.
Cut a horizontal slit in each chicken breast to create a pocket. In a separate bowl, combine the pizza sauce, shredded mozzarella cheese, shredded pepper jack cheese, chopped pepperoni, and sliced black olives.
Stuff each chicken breast with the pizza mixture, dividing it evenly among the four breasts.
Place the stuffed chicken breasts in the air fryer basket, leaving some space between each breast for even cooking. Cook the chicken for 25-30 minutes, or until it reaches an internal temperature of 165°F (74°C).
Let the chicken rest for a few minutes before slicing and serving.
Notes
Use full breasts for this recipe to ensure the filling doesn’t spill out during cooking. Don’t overstuff the chicken or the filling might ooze out during cooking.
For an extra crispy exterior, pat the chicken dry with a paper towel before cooking.
If you want a crisper crust, increase the cooking time by 2-3 minutes. If you prefer a more well-done chicken, cook for an additional 5-7 minutes.
Always use a food thermometer to ensure the chicken is cooked to a safe internal temperature.
