Ingredients
- 2 1/4 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon grated lemon zest
- 1/2 cup plain Greek yogurt
- 1 teaspoon vanilla extract
Instructions
Preheat your oven to 375°F (190°C) and line a 6-cup muffin tin with paper liners.
In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
Set aside.
In a large bowl, whisk together the melted butter, egg, lemon juice, lemon zest, Greek yogurt, and vanilla extract.
Add the dry ingredients to the wet ingredients and stir until just combined – don’t overmix! Divide the batter evenly among the muffin cups.
Bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
Don’t overmix the batter, as it can lead to dense muffins. If using a convection oven, reduce the temperature by 25°F (15°C) to prevent over-browning.
These muffins are best served fresh, but they can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 2 months.
You can also toast and butter them for a tasty breakfast or brunch option. If you want a stronger lemon flavor, increase the lemon juice to 2 tablespoons and the lemon zest to 2 teaspoons.
For an extra crunchy top, sprinkle a pinch of granulated sugar on top of each muffin before baking.
