Ready Time

Yields
4 servings
Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 1 cup granulated sugar
- 2 cups water
- 1/2 cup heavy cream
- 1 tablespoon vanilla extract
- Ice cubes (optional)
Instructions
Rinse the fresh strawberries and remove any stems or leaves, then hull and slice them.
You should end up with about 2 cups of sliced strawberries.
In a blender or food processor, puree the sliced strawberries with 1 cup of granulated sugar until smooth.
In a large pitcher, mix together the strawberry puree, 2 cups of water, and 1 tablespoon of vanilla extract.
Stir well to combine.
Chill the mixture in the refrigerator for at least 30 minutes to allow the flavors to meld together.
Just before serving, stir in 1/2 cup of heavy cream.
You can adjust the amount of cream to your taste.
Taste the agua fresca and add more sugar if desired.
Pour the agua fresca into glasses filled with ice cubes, if desired, and serve immediately.
You should end up with about 4 servings.
Note: You can adjust the amount of sugar and cream to your taste preferences.
You can also add more strawberries for a stronger flavor or use less water for a thicker consistency.
Notes
For a stronger strawberry flavor, use 3 cups of sliced strawberries or add a few more strawberries to the blender. If you prefer a thicker consistency, use 1 1/2 cups of water or even less, depending on your taste.
Keep in mind that you can always add more sugar, but it’s harder to take it away, so start with 1 cup and adjust to taste.
You can also use almond extract or a different flavor extract if you’re not a fan of vanilla. If you don’t have heavy cream, you can substitute it with half-and-half or even whole milk, although the flavor will be slightly different.
Experiment with different types of fruit, like raspberries or mango, to create different flavors of agua fresca.
Chill the agua fresca for a shorter time if you’re in a hurry, but keep in mind that the flavors might not meld together as well. You can make this agua fresca ahead of time and store it in the fridge for up to 2 days, but it’s best consumed fresh.
If you want a more intense color, use more strawberries or add a few drops of red food coloring.
