Slow Cooker Parmesan Garlic Chicken And Potatoes

Ingredients
- 3 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 3 large potatoes, peeled and cubed
- 3 cloves of garlic, minced
- 1 cup of chicken broth
- 1/2 cup of water
- 1/2 cup of grated Parmesan cheese
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 tsp garlic powder
Instructions
Season the chicken with salt, black pepper, dried basil, and dried oregano. In a large bowl, mix together the chicken, garlic, olive oil, and garlic powder until the chicken is well coated.
In a 6-quart slow cooker, add the chicken mixture.
Add the potatoes on top of the chicken. In a separate bowl, whisk together the chicken broth and water.
Pour the mixture over the potatoes and chicken.
Sprinkle the Parmesan cheese over the top. Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
Check the chicken and potatoes for doneness.
Serve hot and garnish with additional Parmesan cheese if desired.
Notes
Use fresh Parmesan cheese for the best flavor.
You can also use frozen chicken breasts, just thaw them first.
Cut the potatoes into similar-sized cubes so they cook evenly.
If you want a stronger garlic flavor, you can increase the amount of garlic cloves.
You can serve this dish with steamed vegetables or a green salad for a well-rounded meal.
Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
You can adjust the amount of chicken broth and water to your liking, depending on how saucy you like your dish.
