Ingredients
- For the Hawaiian Beef Sliders:
- 1 pound ground beef
- 1/4 cup finely chopped fresh cilantro
- 1/4 cup finely chopped scallions (green onions)
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon grated fresh ginger
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 10 small hamburger buns
- 1 cup shredded Monterey Jack cheese (divided)
- 10 slices of bacon
- 10 slices of pineapple
- For the Pineapple Slaw:
- 1 cup pineapple chunks (fresh or canned)
- 1 cup shredded red cabbage
- 1/2 cup shredded carrots
- 1/4 cup mayonnaise
- 2 tablespoons plain Greek yogurt
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
Preheat a grill or grill pan to medium-high heat.
In a large bowl, combine the ground beef, chopped cilantro, chopped scallions, soy sauce, honey, grated ginger, kosher salt, and black pepper.
Use your hands or a spoon to mix until just combined.
Do not overmix.
Divide the beef mixture into 10 equal portions and shape each portion into a ball.
Flatten each ball into a patty about 1/2 inch thick.
Grill the patties for 3-4 minutes per side, or until cooked to your desired level of doneness.
Meanwhile, toast the hamburger buns on the grill or in a toaster.
While the burgers are cooking, cook the bacon slices in a large skillet over medium heat until crispy.
Remove the bacon from the skillet and set aside on a paper towel-lined plate.
Assemble the sliders by spreading a slice of cheese on the bottom bun, followed by a cooked patty, a few slices of bacon, a slice of pineapple, and finally the top bun.
To make the Pineapple Slaw, combine the pineapple chunks, shredded red cabbage, shredded carrots, mayonnaise, Greek yogurt, chopped cilantro, and honey in a bowl.
Mix until well combined.
Season with salt and pepper to taste.
Serve the sliders with a side of Pineapple Slaw and enjoy!
Notes
For the best flavor, use fresh pineapple chunks instead of canned. You can prepare the Pineapple Slaw ahead of time, cover and refrigerate for up to 2 hours.
To toast the hamburger buns, simply place them on the grill or in a toaster for a few seconds.
If you’re not a fan of pineapple, you can substitute it with another fruit, like apple or orange slices. Make sure to not overmix the beef mixture, as it can lead to dense burgers.
If you want to make the sliders more substantial, add some lettuce or tomato slices.
For an extra crispy bacon, bake it in the oven at 400°F (200°C) for 15-20 minutes instead of cooking it in a skillet.
