Ingredients
- 1 cup mixed seasonal fruits (strawberries, blueberries, grapes, pineapple, kiwi)
- 1/2 cup pineapple juice
- 1/4 cup brown sugar
- 1/4 cup chopped fresh mint leaves
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 teaspoon grated ginger
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cayenne pepper
- Salt to taste
Instructions
Cut the mixed seasonal fruits into bite-sized pieces and place them in a large bowl. In a small bowl, whisk together the pineapple juice, brown sugar, honey, lime juice, grated ginger, ground cinnamon, and ground cayenne pepper until well combined.
Pour the juice mixture over the fruit and toss to coat.
Sprinkle the chopped fresh mint leaves over the fruit and toss again. Season with salt to taste.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Serve chilled and fresh.
