Ranger Cookies I

Ingredients

  • 3 cups all-purpose flour
  • 1 cup flaked coconut
  • 1 teaspoon baking soda
  • 1 cup shortening
  • ½ teaspoon salt
  • 1 cup white sugar
  • ½ teaspoon baking powder
  • 1 cup packed brown sugar
  • 2 cups rolled oats (quick or old fashioned) // add more if desired, these make the cookies more chewy. liked by some people. can also use steel cut oats for a heartier cookie. // decreased amount to 1/2 – 3/4 c would work too, depending on how much you like oatmeal in your cookies!
  • 2 eggs beaten // could use an egg replacer here if vegan! just follow package instructions for equivalent of 2 eggs.
  • 2 cups crisp rice cereal // feel free to sub in puffed quinoa, corn flakes, or any other type of crispy grain here! get creative.

Instructions

1. Preheat oven to 375 degrees Fahrenheit.

2. In a bowl, cream together shortening and sugar until light and fluffy. Add eggs and vanilla extract, beat well.

3. Sift flour, baking soda, salt and baking powder together then mix into the creamed mixture from step 2. Stir in oatmeal, rice cereal and coconut until everything is evenly mixed.

4. Drop dough by tablespoons onto a lightly greased cookie sheet ( lined with parchment paper for easy cleanup). Bake for 12 minutes or until cookies are golden brown around the edges. Let cool on a wire rack before serving!
