Pinwheel Cookies III

These cookies are so named because they resemble a pinwheel. They are made with a shortbread dough that is rolled out, spread with a fruit filling, and then rolled up and sliced into cookies. The dough can be made ahead of time and refrigerated for up to two days before baking.


  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 3 eggs
  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons vanilla extract
  • 3 cups chopped dates, pitted and chopped (divided)
  • 1 cup chopped walnuts (divided)
  • ½ cup white sugar
  • 1 cup water


In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture until everything is well blended.

Divide the dough into 4 parts. On a lightly floured surface, roll each piece of dough out to 1/2 inch thickness. Spread with cooled filling (not too cold or it will be difficult to spread). Roll up jelly-roll style and place on cookie sheets. Refrigerate for at least 30 minutes (preferably longer) before baking.

When ready to bake, preheat oven to 400 degrees F (205 degrees C). Slice chilled rolls about 1/2 inch thick and place on ungreased cookie sheets. Bake for 10 minutes or until golden brown around edges.
