Pineapple Cookies II

These cookies are sure to please any pineapple lover! They are soft and chewy, with a delicious pineapple flavor. Be sure to use fresh, ripe pineapple for the best flavor.

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 (8 ounce can) crushed pineapple with juice
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground nutmeg

Instructions

1. Preheat oven to 400 degrees F (200 degrees C).

2. In a bowl, cream together the butter, sugar and egg until smooth.

3. Mix in the pineapple until well blended.

4. In another bowl, whisk together the flour, baking powder, salt and nutmeg. Add this to the wet ingredients and mix until everything is well combined.

5. Chill dough for at least one hour in the fridge (this step is important! If you don’t let it chill, your cookies will spread out too much while baking).

6.. Drop dough by teaspoonfuls onto a lightly greased cookie sheet, making sure to leave enough space between each cookie as they will spread out while baking.

7.. Bake for 8-10 minutes or until barely golden brown around the edges but still soft in the center when touched lightly with a finger(overbaking will make them tough). Remove from oven and let cool on cookie sheet for a minute or two before transferring to a wire rack to cool completely
