Pepparkakor I
A popular Swedish Christmas cookie, these thin and crispy ginger cookies are easy to make and perfect for Holiday gifts!
Ingredients
- ⅔ cup packed brown sugar
- ⅔ cup molasses
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
- ¾ tablespoon baking soda
- ⅔ cup butter, softened
- 1 egg, beaten
- 3 ½ cups all-purpose flour
Instructions
1. Preheat oven to 325 degrees F (170 degrees C).
2. In a medium saucepan, heat brown sugar, molasses and spices just to boiling point. Add baking soda and stir in.
3. Pour this mixture over the butter in a large, heatproof bowl and stir until it melts.
4. Beat egg and mix into the molasses mixture; add flour, a cup at a time, and blend thoroughly to form a soft dough.
5. Turn out onto a lightly floured board and knead 1-2 minutes; wrap in waxed paper or plastic wrap and chill until firm (about an hour).
6 Roll out dough on a lightly floured board to approximately 1/8 inch thickness; cut into desired shapes with cookie cutters or knives 7 Place cookies on greased baking sheets close together; bake for 8 – 10 minutes until golden brown around the edges but still pale in the center when removed from oven. Cool on racks
