Oatmeal Raisin Cookies II
These are the perfect oatmeal raisin cookies! They are soft and chewy with the perfect amount of sweetness. The raisins add a lovely pop of flavor and texture to these otherwise simple cookies.
Ingredients
- -1 cup (2 sticks) unsalted butter, at room temperature
- -1 cup granulated sugar
- -2 large eggs
- -1 teaspoon pure vanilla extract
- -2 cups all-purpose flour
- -1 teaspoon baking powder
- -½ teaspoon baking soda
- -½ teaspoon salt
- -3 cups old fashioned oats
Instructions
1. Preheat oven to 375 degrees Fahrenheit and spray a large cookie sheet with non-stick spray.
2. In a large bowl, mix together corn-oil spread and brown sugar on low speed until blended.
3. Increase mixer speed to high and beat mixture for 3 minutes until well combined.
4. Add egg whites, egg, and vanilla extract to the mixture at low speed and beat until smooth.
5. With a spoon, stir in flour, oats, raisins, baking powder, and salt until combined.
6. Drop dough by heaping tablespoons onto the prepared cookie sheet, spacing them about 2 inches apart from each other . Flatten dough into 3-inch circles using your hands or a spatula .
7 Bake cookies for 16-18 minutes or until golden brown . Remove cookies from the oven and transfer them to wire racks to cool for 15 minutes before serving . Store leftover cookies in a tightly covered container
