This is a classic no bake cheesecake that’s so easy to make! All you need is a food processor, a few simple ingredients, and about 30 minutes of your time. Ingredients

  • 1 cup graham cracker crumbs
  • 1 cup pecan sandies cookies
  • 4 tablespoons butter
  • 4 tablespoons white sugar
  • 16 ounces cream cheese
  • 2/3 cup white sugar
  • 4 tablespoons lemon juice
  • 1 cup heavy whipping cream, whipped
  • 1 cup sliced fresh strawberries

Instructions

1. In a bowl, mix together the graham cracker crumbs, pecan sandies cookies, melted butter and 3 tablespoons sugar.

2. Press this mixture into a 7 inch springform pan. Place in refrigerator until ready for use.

3. In another bowl, beat cream cheese, 1/3 cup of sugar and lemon juice until smooth.

4. Whip cream and fold it into the cream cheese mixture gently until combined well.

5. Spread this mixture into the pan on top of the cookie crust layer evenly using a spatula or spoon.

6. Top with sliced strawberries (optional). Freeze for 1 hour, covered with foil to prevent freezer burn on top of cheesecake surface if not eating right away.)

7:Place in refrigerator 30 minutes before serving so that it can set properly
