Mrs. Sigg’s Fresh Pumpkin Pie

This is the best pumpkin pie recipe that I have come across. Mrs. Sigg’s Fresh Pumpkin Pie is so delicious, and it is pretty easy to make too.

Ingredients

  • 1 sugar pumpkin, 1 recipe pastry for a 9 inch double crust pie, 2 eggs, 1 cup packed light brown sugar, 1 tablespoon all-purpose flour, ½ teaspoon salt, 2 ½ teaspoons pumpkin pie spice, 1 (12 fluid ounce) can evaporated milk

Instructions

1. Preheat oven to 325 degrees Fahrenheit and cut pumpkin in half. Remove seeds from the pumpkin halves and place them, cut side down, on a cookie sheet lined with lightly oiled aluminum foil. Bake for 30 to 40 minutes or until the flesh is tender when poked with a fork.

2. Allow the baked pumpkin to cool until it is just warm before scraping the flesh from the peel. Mash or puree the pumpkin flesh in small batches using a blender.

3. Raise oven temperature to 450 degrees Fahrenheit. In a large bowl, slightly beat eggs then add brown sugar, flour, salt, 2 cups of pumpkin puree, pumpkin pie spice and evaporated milk while stirring well after each addition.

4 Pour mixture into an unbaked pastry shell then place a strip of aluminum foil around edge of crust to prevent over browning during baking process..

Bake for 10 minutes at 450 degrees Fahrenheit then reduce oven temperature to 350 degrees Fahrenheit and bake an additional 40-50 minutes or until toothpick inserted near center comes out clean..

5 Remove strip of aluminum foil from around edge of crust about 20 minutes before pie is done so that light golden brown color has time to form on crust’s edges . Let pie cool completely
