  • 1 pound ground beef
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/4 teaspoon cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (4 ounce) can diced green chilies
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (8 ounce) can tomato sauce
  • 1/2 cup beef broth
  • 8 (8 inch) flour tortillas
  • 2 cups shredded Mexican cheese blend

Instructions

  • Preheat oven to 375 degrees F.
  • Heat a large skillet over medium-high heat. Add ground beef and onion and cook, stirring and breaking up the beef with a spatula, until the beef is no longer pink and the onion is translucent, about 7-8 minutes.
  • Add garlic, chili powder, cumin, oregano, and cayenne pepper and cook, stirring, for 1 minute.
  • Add diced tomatoes, green chilies, black beans, tomato sauce and beef broth. Stir to combine. Bring to a boil, reduce heat to low and simmer for 15 minutes.
  • Meanwhile, spread 1/4 cup of the beef mixture in the bottom of a 9×13 inch baking dish. Top with 2 flour tortillas. Spread 1/3 of the beef mixture over the tortillas and sprinkle with 1/3 of the cheese. Repeat layering two more times. Top with remaining 2 tortillas and remaining beef mixture.
  • Sprinkle with remaining cheese. Cover baking dish with aluminum foil.
  • Bake for 40-45 minutes. Let cool for 5 minutes before serving. Enjoy!
