Ingredients

  • 1 cup all-purpose flour, 1/4 cup confectioners’ sugar, 1/4 cup butter, 1 cup white sugar, 2 tablespoons all-purpose flour, 1/2 teaspoon baking powder, 2 eggs, 3 tablespoons lemon juice, 1 tablespoon lemon zest, confectioners’ sugar for decoration

Instructions

1. Preheat oven to 350 degrees F (175 degrees C).

2. To make the bottom layer: Mix one cup flour and 1/4 cup confectioners’ sugar together. Melt the butter and stir it into the flour mixture until it is well blended. Press the mixture flat and evenly into an 8×8 inch baking dish. Bake for 20 minutes.

3. While the bottom layer is baking, make the top layer: mix 1 cup sugar, 2 tablespoons flour, and the baking powder together in a bowl. In another bowl, beat the eggs and then stir them into the sugar mixture until everything is well blended. Add lemon juice and rind, mix again.

4. Pour over bottom layer; bake at 350 for 25 minutes more. Cool for a little bit before cutting into squares while warm; dust with confectioners’ sugar before serving
