Regular cheesecake uses heavy cream and sour cream to thin out the batter and create a silkier, creamier texture. This makes for a lighter, fluffier cake overall. Meanwhile, New York cheesecake is much heavier on the cream cheese, resulting in a denser, richer cake.

Extra cream cheese isn’t the only thing that makes New York cheesecake so special though. The way it’s cooked also plays a role. New York style cheesecakes are typically baked at a lower temperature for a longer period of time than regular cheesecakes. This helps to prevent cracks from forming on the surface of the cake.

So which type of cheesecake is better? That really depends on your personal preferences! If you like rich, dense cakes then you’ll probably prefer New York style cheesecake. But if you prefer lighter, airier cakes then regular cheesecake might be more up your alley.
