There are many different ways to make hamantashen, but this recipe for Hamantashen II is one of our favorites. It features a creamy poppy seed filling that is both flavorful and festive.
Ingredients
- 4 eggs, 1 cup vegetable oil, 1 ¼ cups white sugar, 2 teaspoons vanilla extract, 3 teaspoons baking powder, ½ teaspoon salt, 5 ½ cups all-purpose flour, 1 (21 ounce) can cherry pie filling
Instructions
1. In a large bowl, whisk together eggs and oil until combined.
2. Add sugar, vanilla, baking powder and salt to the bowl and mix well.
3. Gradually add flour to the mixture, mixing well after each addition until dough is soft enough to roll out.
4. Refrigerate dough for at least 2 hours or overnight.
5. Preheat oven to 350 degrees F (180 degrees C).
6. Cut dough into 3-inch circles using a cookie cutter or cup with sharp edges.
7 Fill each circle with 1 tablespoon of cherry pie filling in the center then fold up the sides of the circle into the middle and pinch together tightly so filling doesn’t leak out during baking.)
8 Place hamantashen on a lightly greased baking sheet and bake in preheated oven for 20 minutes or until golden brown
