Ingredients

  • Green Tomato Chutney:
  • -2 1/2 pounds firm green tomatoes, cored and chopped (about 7 cups)
  • -1 1/4 cups brown sugar, packed
  • -1 cup chopped red onion
  • -1 cup golden raisins
  • -1 cup apple cider vinegar
  • -2 tablespoons chopped candied ginger
  • -1 tablespoon mustard seeds
  • -1 teaspoon chile pepper flakes
  • -1 teaspoon fennel seeds
  • -1 teaspoon salt -1/2 teaspoon ground allspice -Pinch ground nutmeg

Instructions

1. Place a steamer rack in the pot and fill the pot with water up to the rim of the jars.

2. Bring to a boil and reduce to a simmer. Wash the lids in hot, soapy water.

3. Place all ingredients in a medium sized pot and bring to a boil, then reduce heat and simmer for 45 minutes, covered. Taste and adjust seasonings as needed.

4. Remove jars from boiling water (reserving water if canning) and ladle chutney into them, filling to 1/4 inch from rim of jar. Wipe rims with clean wet paper towel if necessary.

5 . Place lids on jars and screw on canning rings until tight fitting.. 6 Return filled jars back into boiling water (making sure they are completely submerged), adding more boiling water if needed until there is an inch of space between top of water level and bottom of lid on jar.. 7 Boil for 15 minutes (or 20 minutes at altitudes above 1000-6000 feet). 8 Remove jars from boiling water using canning tongs or ladle, being careful not set them down too hard because they are full of hot liquid.. 9 Allow them to cool
