Everything Cookies II

These are my go-to cookies when I want a little bit of everything in one bite. They have a chewy center with a crispy edge, and are packed full of chocolate chips, dried fruit, and nuts. I like to use a mix of chopped walnuts and pecans, but you can really use any combination of your favorite nuts. And for the dried fruit, I usually go for raisins or cranberries, but feel free to mix it up with whatever you like best.

Ingredients

  • 1 cup butter, 1 cup packed light brown sugar, 1 cup white sugar, 1 egg, 1 teaspoon cream of tartar, 1 cup rolled oats, 1 cup flaked coconut, 1 cup vegetable oil, 2 teaspoons vanilla extract, 3 cups all-purpose flour

Instructions

In a large bowl, cream together the butter or margarine with the sugars. Beat in the egg. Add in the cream of tartar, oats, coconut, vegetable oil and vanilla. Sift together the flour, salt and baking soda and add to mixture. Stir in crisp rice cereal and chocolate chips. Drop by teaspoon on greased baking sheets. Bake in a 350 degree F (175 degree C) oven for 12 minutes
