Cinderella’s are a classic American dessert that can be made in a variety of ways. The most popular way to make them is with yellow cake mix, but they can also be made with chocolate cake mix or even red velvet cake mix. They are usually frosted with a vanilla buttercream frosting, but you could also use a chocolate buttercream or even a cream cheese frosting.

Ingredients

  • 2 cups peeled and halved potatoes
  • 4 cups confectioners’ sugar
  • 1 (16 ounce) package chocolate frosting mix
  • 2 tablespoons corn syrup
  • 3 tablespoons water
  • 2 tablespoons butter

Instructions

1. In a small saucepan, cover peeled potatoes with water. Bring water to a boil and cook until tender, about 15 minutes. Let cool and mash.

2. Blend together the confectioners’ sugar, 3/4 cup mashed potatoes, coconut, and amaretto. Cover and refrigerate for at least four hours or overnight.

3. To Make Frosting: Using double boiler, mix together the frosting mix, corn syrup, water and butter or margarine. Stir until butter is melted and mixture becomes smooth. Remove from heat.

4 Form pieces of potato mixture into walnut-sized balls 5 Dip in frosting mixture 6 Set on cookie sheet unfrosted side down 7 Refrigerate at least two hours
