Ingredients

  • 1 cantaloupe, peeled, seeded, and cubed
  • ½ cup white sugar
  • 8 tablespoons all-purpose flour

  • 3 egg yolks
  • 2 tablespoons water

Instructions

1. Preheat oven to 400 degrees F (205 degrees C).

4. In a large bowl beat egg yolks; add water to yolks then add a little of the cantaloupe mixture in order to heat yolks gradually before adding them into the saucepan with the rest of the cantaloupe mixture . Stir egg yolk mixture into cantaloupe mixture then continue cooking , stirring , until thick and creamy before removing from heat .

5- Add butter or margarine and flavoring extract to taste . Pour filling into baked pie shell

6- Beat egg whites and cream of tartar together until frothy before continuing to beat , adding 6 tablespoons sugar gradually ;
