Butternut Squash Leek Soup


  • 2 tablespoons olive oil

  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley, for garnish (optional)


  • Preheat your oven to 400 degrees F.
  • In a large pot, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and leek, stir for another minute.
